Hey did you guys know we were paleo?!?!? Yeah…… It feels so gooooood to get back in the kitchen cooking after my indulgent weekend. Sooo what’s on the menu you ask…..hmmmmmmm
Paleo Pesto chicken…Assorted iven roasted veggies and a spinach, beet and pecan salad!!!!!
Welll no surprise here, a little jackassing around before we started working! Our Favorite part
The stale face is the hardest!!!!
So first things first…..lets marinade that chicken for 45mins before cooking!
Chopped basil, parsley, 3 cloves garlic minced, half a teaspoon of salt and a squirt of lemon!!!! The chicken when in to the oven on a shallow pan for 35mins at 350 degrees! While that baked We chopped up some veggies!!!!
We have Okra, which so yummy and a nice texture change!!! Asparagus, and a bag of pre chopped broccoli, carrots and cauliflower……. So we tossed them in a drizzle of olive oil, half a teaspoon of salt and pepper. I think the simple things are the best!
Something as an adult that I have totally grown to love are beets. I was at work one day and ran upstairs to Sara’s office terrified because i was sure i was peeing blood. And she was so sweet and her first question was did you eat beets? Like this was a common thing! OmG the things veggies do to your pee haha!
So i went to whole foods and got beets off of there salad bar. Because I heard roasting beets was a definite labor of love…..well not tonight it is not!
ingredients:
spinach
chopped pecans
beets
red onion
And we dressed it with some olive oil, balsamic vinegar, salt and pepper! delicccccc!!!
Put them in a shallow pan and in the oven at 400 degrees for 30mins while the chicken rests.
And then we ate it!!!! You guyyyyss, I think this was a home run! so good and a full meal!
It felt so good to get some good food back our bodies! And there was plenty for lunch…….Best lunch evaaa!!!! Get it right get it tight!!!! I love fooooood!!! Feed me Semore! yum yum yum! Twas amazing. Love cooking with my meatball!!!!!
