How was y’alls Thanksgivings!?  We hope they were happy…and maybe healthy!?!?  Jenny and I were on the ball for this holiday.  Monday we went grocery shopping at Trader Joe’s!

We decided to cook a few dishes together so that we could come prepared for our family Thanksgivings!  Holidays can be such a slippery slope and this holiday IS LITERALLY only about food!  Planning…check!  Then we ran into some not good for us snacks!

Ironically we both ended up buying these bc we forgot about our potluck for work the next day!  Sorry work friends…we did not contribute anything healthy!!!  Thank goodness for Nikki…she brought the living yummiest paleo stew!!!

Thennnnnnn we took a little bit of an unfortunate turn!  We went to Shaba Shabu for take out BOGO sushi.  #wolfpackrolllllllllsfordays Not our best decision…right before Turkey Day annnnnd weigh in.  Gah who planned this month!?  The next couple of days were tricky as well! #flirtingwithdisaster Something inside of my brain said…it’s winter, you better pack on those pounds you little bear…it’s hibernation time! #fatandjolly #tenpizzas Yikes. But I have been feeling really thick in the middle as evidenced by this winter weighty pic from yesterday…

It certainly doesn’t help that my sweet runner friend is 11 feet tall and slender but I have been fast and loose with eating and working out lately!!!  And right in time for all of our Good Things (wink wink) with Bill Leslie and Fleet Feet…perfect time to gain weight am I right ladies!?

So we had a great little heart to heart on Wednesday and have I said lately how grateful I am for Jenny?! She always helps me get right back on track and reminds me to be more nice and less intense hahahahaha!!! #lovehersomuch

She came over that night and we cooked all the yummy, healthy food that we bought! She started in on an Apple Crisp that we have made before…it’s the living yummiest and now we will both have a dessert that won’t tip the scales in the wrong direction!

Ugh!!!  Everything is so much more fun together!  We also took a break to sing Ain’t No Mountain High Enough…I was Marvin Gaye and she was Tammy Terrel (sp!?)!

I was in charge of our veggies!  We decided to do a roasted sweet potato chipotle salad!!!

You guyssss…this smelled like soooo smokey which is not my fav…but it was DELLSH!!!

Then it was on to some spicy asparagus with panchetta!

1 bundle of asparagus

1 Tbsp Olive Oil

1 tsp Cayenne Pepper

1 tsp Red Pepper Flakes

Salt and Pepper

1 tsp Garlic Powder

1 small package of Panchetta

Put oven on at 350, take a baking sheet and line with asparagus…drizzle olive oil over the veggies and sprinkle on dry ingredients.  Then pour the panchetta over the asparagus.  Roast for 20 minutes…or longer depending on how done you  like it!!!

Sooooo fun!!!  We also got deep about getting back on track and how excited we are to team up with Fleet Feet for the #tonoffun challenge.  This happened at the perfect time!  All the cooking was done around 11 and we were pooped!!!  Now it’s Thanksgiving morning and since I’ve been such a psycho about doing whatever I want in the most unhealthy way…I started today off at the gym!  My mom, dad and myself did a hell of a workout…Sandy you would have been proud #startingthedayoffright! We did rowing, chest, tri’s, and a million stations of planking, frogs, ball slams, bosu sit ups and tabata abs!!!

Now it’s off to Aunt Deb’s for a real test in commitment!!!  I do not want a plus sign on my chalk board this Saturday when we shoot the weigh in so I need to be fuggin serious! And guess what…I did!!!!  Did you guys know that I like…LOOOOOOVE my family!?  I love a holiday and then add my amazing family and my preparedness…today was heaven!

Just call me a pilgrim bc I murdered Thanksgiving this year!  #killingthisoutfit Me, Kelly and the kids rode out together to Aunt Debby and Uncle Steve’s in Smithfield.  The car ride was full of singing…Katy Perry, Taylor Swift…every young boys dream!  Chase passed the f out!  Pre turkey nap!

Two Meatballs: A Sea of Thank You’s!!!

With Thanksgiving coming up these Meatballs have so much to be thankful for. First off let me say thank you so much for the birthday wishes, flowers, cards, paleo desserts, mixed cd’s #thankskelly, gifts and facebook love!!!  It really was the living best day of life! Being thankful has really become a theme for us over the past couple of weeks and I love it.  Life is so much easier and perspective is so different if you live in a constant attempted state of grateful.  With this theme in mind we wanted to continue thanking our weigh in photo shooters!  So tonight was Cara Dempsey night at our most favorite place on earth Coquette. Cara said fries were her weakness so what better place to go! Right away we ran into some of my favorite clients… the Wicklines!!!  Shout out to Jen, Ryan and the fam!!!

We had the best conversations and sooo many laughs!!! We talked families, fierce conversations, exercise, holidays, what to do for the next shoot and even budgets.  It has been so nice getting to know Cara better!!!  We ordered three  entrees and shared them…our favorite!!!  Jenny got Beef Bourguignon…#imablogger

Our next segment is a little get to know you sesh with our dear buddy Sandra!!!  She has been so incredibly instrumental in our journey to fitness and wellness.  She has taught us how to take care of ourselves physically and believed we were capable of more than we ever thought possible.  It feels so nice to feel strong!  Talk about empowering!  So we want for you to get to know our amazing trainer a little bit better!!!  I mean look at her…why are you not already seeing this woman!

1. How and when did you find fitness?

I was a dedicated athlete in high school and active during college, but I struggled to find a place for fitness after college when I entered the workforce. Plagued by unhealthy eating and lifestyle habits, my weight spiraled out of control. I hit my breaking point when the scale reached 160 lbs and my 5’2” frame was wearing a size 14. Fortunately, I found my way back to a healthy weight through healthy eating and exercise. I exercise because I love what it does to my body both physically and mentally. Proper nutrition affects the way you feel throughout the day and gives you the energy you need to get through that workout. I can truly say that I FEEL better today than when I was in my early 20’s.

2. What was your biggest weight struggle in the past?

My weight spiraled out of control when I was in my late 20s due to unhealthy eating and lifestyle habits. For years, I always found it a struggle to find a “diet” that would work for me and become a lifestyle. Today, I follow a very clean diet eating lots of proteins, vegetables, fruit and nuts. I stay away from processed foods, grains, and I try my hardest to avoid gluten. This past year, I was diagnosed with Hashimoto’s disease, and I’ve been struggling with the fact that I’ve actually gained weight despite the clean eating. It is certainly a mental struggle but I’m going to keep pushing hard and continue eating clean because I truly feel better eating this way.

3. How do you set yourself up for success?

Three things: 1) Surround yourself with positive influences and those that reflect who you want to be and how you want to feel. 2) Plan Ahead. Portion out your proteins and healthy snacks and prep your veggies, salads, and fruit ahead of time so you don’t get tempted when you are hungry. 3) Make your workouts an appointment on your calendar. If you don’t make it a priority, it will get pushed further into the day and sometimes never get done.

4) How have your recent health issues affected your journey?

We are all on our own journey to good health. I eat clean and exercise so that I can feel strong, have energy and feel well. Unfortunately, in the past year, I became excessively tired, irritable, moody, anxious and even depressed on occasion. To make matters worse, I was gaining weight despite eating a clean diet and training consistently. It was determined that my thyroid gland was underactive (Hashimotos disease) and that I have high levels of metals, particularly mercury and lead, in my system. These metals are blocking my thyroid gland from making hormones and getting my metabolism going.

To address this issue, I now follow a strict Paleo-type diet. It has actually made me more disciplined because I hit a breaking point where I was just so tired of feeling bad. To be honest, I actually enjoy eating this healthy and cannot see me ever going back to how I used to eat before. While my weight is still an issue, I have to keep reminding myself that I am human too. Just because I am a trainer, sometimes there are outside factors interfere with your fitness journey. You can’t let them get in the way of your overall goal. I know I will overcome this. I am too strong to give up now.

Tom was so fun and you could see him shimmying to the music that was blasting over the speakers.  He told us after he got his shots that he was on his own journey and had just lost 100 pounds!!!  Incredible Tom!!!!  We are always amazed at how universal this struggle is and it’s so inspiring to meet other people in the same journey!  Xoxo Tom!  We don’t know when the segment is going to air but as soon as we do we will post it!!! Two Meatballs: Will Cook For Labor!

You guyyys?!  Little inside scoop on me…I am not handy! I have great ideas and I’m a good worker but the inner workings of the executions are lost on me. I am also co-dependent.  I feel very capable but I just think all things are more fun when you do them together…am I right ladies!? (hello TWO meatballs!)  Being single, vertically challenged, overweight and without a ladder of my very own makes even simple tasks like changing a lightbulb for instance DIFFICULT! So what’s a single gal to do…sweetly ask for the help of her family and friends!!!  Lately I have been receiving soooo much help and just support in general and I couldn’t appreciate it more!  I’ve been hooked on HGTV for awhile and needed a summer makeover at casa del Beard.  If you saw my house you would say…yep that looks about right.  It is chock full of neon pink bathrooms with dead doll chandeliers, tons of quirky art and one hundred thousand million pictures. BUUUUUUUUT there were some areas that were lacking.  I think bc of my continual hangover that lasted all weekend every weekend from my former life…there were just a lot of things on my list to do that never got ta done.  Well with a clear head and my new budgeting skills this girl went out and bought a grill, patio furniture and gave my prison inspired bedroom a much needed facelift.  Home Depot, Target and Home Comfort are my new looooves. So I called in the troops and offered a barter system of food for labor and they oh so sweetly agreed!

Obvi I needed help and a wayyyyy bigger car than Jane Honda.  My parents are total life savers.  Now time to assemble this mess!!! Sidebar…I was helping not just snapping 1000 photos!  Thank goodness my family likes the camera!

On to my sad sack of a bedroom.  I repainted awhile back and I wanted everything gray…I went full 50 shades…but then because of my intrinsic laziness and before mentioned challenges when it comes to projects…i never hung any of my artwork back up …and I chose a gray bedspread…and I felt super bummmmmed every single time I looked around!  It so did not feel homey to me…time for change!

Ugh….sooooo much better!!!!  Now I just love waking up in that beautiful room every morning!

 

On to the grill  which was assembled minus the propane tank which I had to call my buddy and old roommate Matt over to help me bc it made a terrible…I’m gonna describe it as explosive…like impending death sound when I attempted to hook it up!  He seemed to have no trouble at all…thanks Matttttt!

Loving this outdoor lifestyle now and grilling will open up so many more cooking options so that i wont get bored and my child like mind can stay entertained! Which brings me to my next segment called…how do you repay all these acts of kindness!?  With healthy delicious food made with your love and appreciation…ding ding ding! So I invited my family over on Sunday to thank them and show off my new grillin skillz (yeah I did a z…what).  So what’s on the menu today???

Chimichurri Ribeyes, Garlic Roasted Green Beans, Roasted Sweet Potatoes and Butter Roasted Corn on the Cob!!!!  Holy yum balls this was sooo good!

Here are the recipes:

Chimichurri Marinade:

1/2 cup red wine vinegar

3/4 cup extra virgin olive oil

2 cups fresh cilantro chopped

1 cup fresh parsley chopped

4 cloves of garlic minced

1tsp sea salt

combine all ingredients in a food processor and pulse until blended.

Pour 80% of this over your steaks…we had 6 ribeyes in a glass cooking dish and cover and let marinate for at least an hour.  Take steaks out of the fridge 45 minutes before cooking to let get to room temp.  Turn grill onto medium high heat and cook for 3-4 minutes per side depending on your preference.  yum yum yum

Then I preheated the oven to 450 degrees…where is the degrees symbol on a laptop!? hmmm….i digress.  Take the husks and silky stuff off your corn, butter it and wrap individually in tin foil then place on a baking pan and roast for 30 minutes.  Then toss your green beans with EVOO and garlic salt, place on a foil lined pan and place them in the oven next to the corn.  Then slice 3 medium sweet potatoes and toss with sesame oil, sea salt and black pepper and place directly onto a baking sheet that you have sprayed with coconut oil and throw those bad boys into the oven as well!  My house smelled like HEAVEN.

Reserve the last 20%…see there is the percent sign but I still don’t know where the degrees button is!?..of the chimichurri sauce for dipping that yummy steak and everything else in and blam…lunch is served!

I cannot explain to you what a total 180….where is that god forsaken degrees button!?!?!?… this is for me.  I used to only be responsible for showing up at gatherings bc it was common knowledge that I could NOOOOOOT cook.  At most I could be trusted with bringing a soda…maybe a store bought dessert.  I’m def the baby of the family.  And I know that this post sounds like I am helpless damsel in distress but really I’m just a lover of great company…I just want to spend endless amounts of time together! And I want to pay back the years of never contributing food to the family cause.  And look at those faces…this was yumo!  After lunch the kids were full of Urkle entertainment and we enjoyed the new outdoor options at Mo’s house (that’s me you guys)..

Chase is really good at going potty solo but just has no idea where those pants are supposed to go afterwards..it’s too high or too low…and Wyatt is always down to entertain.  He will kill me one day for these pics!
